Sweet and Tart Vanilla Cranberry Muffins (Grain-Free and Sweetened with Honey Paleo Muffins)

cranberriesSome people look to find love on a television show, and some people, like me, find love in their oven. I could hardly tear myself away from watching The Bachelor Season Finale to write this post. But some how, I managed (when I fell in love with these treats). Cranberry and ‘Bachelor season might be over, but I found these little gems in my freezer and decided to bake something simply wonderful. This recipe is quick and easy and great for a last minute, on-the-go breakfast. They freeze well, but I doubt you’ll need to.

Sweet and Tart Vanilla Cranberry Muffins

6 tablespoons real butter (must be soft room temp)
4 eggs (must be room temp..otherwise they will harden butter and you’ll be screwed)
1/2 cup honey
1 teaspoon vanilla
1/2 cup coconut flour
3/4 teaspoon baking soda
3/4 cup cranberries chopped

Preheat oven to 350˚

Mix butter, eggs, vanilla, honey together. If you are looking for a decently priced, hormone-free butter, try Kate’s Homemade Butter from Maine. Whisk together coconut flour and baking soda, add to butter mixture. Mix butter and flour mixture thoroughly, add cranberries. Makes about 8 medium sized muffins.
