Peanut Butter Brownies (Grain, Gluten Free Paleo Dessert)
These tasty “brownies” only have five simple ingredients. They are chewy, sweet and nutty. Just like me. Kidding! Well, at least about the chewy part. The taste of peanut butter in a brownie texture is a deliciously unusual combination. What’s your favorite taste combo? This is just one of mine!
Paleo Peanut Butter Brownies
1 cup crunchy natural peanut butter- stir to mix the oil
3/4 cup honey
2 eggs + 1 yolk
1/3 cup coconut flour
1 teaspoon baking soda
Preheat oven to 350˚. Mix peanut butter, eggs, and honey thoroughly. In a separate bowl, sift flour and baking soda together to smooth out lumps. Mix dry ingredients with peanut butter mixture. You can grease the pan, I lined it with parchment paper and that worked well as well. Bake for about 15-20 minutes or until golden brown. Makes about 20 brownies. I like chewier brownies, so I take them out a little early. These will store well, as with all baked goods with coconut flour, they soak up the moisture in the air, so if it’s slightly humid, you won’t need to cover them. Eat and enjoy!
