4 Ingredient Nut Butter Cookies- Paleo, Gluten & Grain Free
These cookies are so easy to make, you’d be a fool not to…make them. And you’d be even more foolish if you didn’t pass this recipe on to your friends who are baking novices. Using only four healthy ingredients, you mix, bake, and eat. It’s a sweet and tasty recipe for last-minute dessert options or when you need to bring a snack for those office potlucks. 1/2 cup almond or peanut butter, sugar-free
1/2 teaspoon baking soda
1/2 cup coconut sugar– or regular sugar if you aren’t on the paleo diet
1 medium egg
Preheat oven to 350˚. Mix all dry ingredients in a bowl. Blend the egg and nut butter of choice separate bowl. Combine all ingredients thoroughly, line a baking sheet with parchment paper. Place cookies about two inches apart, using a heaping teaspoon to measure cookie batter for each cookie. This should be precisely enough batter to make a dozen regular-sized cookies. Note that the appearance and texture of the cookies will slightly vary depending on what kind of nut butter you use. They should be chewy and semi-raw on the inside and a little crispy on the outside. Bake for 9 minutes, remove pan from oven, let sit for a minute and remove the cookies onto a cooling rack or cool surface. Eat!
