DIY Holiday Cards and 1000 Calorie Coconut Hot Cocoa…Dairy Free Hot Cocoa Recipe
Release your creative juices for some stress relief this season. All you need is some blank card stock, holiday inspired ribbons, construction paper, glue and hot cocoa.
I really love this hot cocoa made from coconut milk, but since coconut milk is extremely caloric, I mix it with almond milk to cut the fat. On special occasions when I am feeling particularly athletic (ie: spending all day and night running around the kitchen) and in need of the extra fuel, I will however use only coconut milk. It has a thick texture makes the drink more like drinking chocolate instead of hot cocoa. If you choose to make it with only coconut milk it will be extra creamy and you might want to serve in smaller portions. Set yourself free to drink and create.
Coconut Hot Cocoa
2 cups of pure coconut milk- I use canned Goya brand
2 cups unsweetened almond milk (or substitute coconut milk to make drinking chocolate)
1 tablespoon honey- 2 if you like it sweeter
2 tablespoons unsweetened cocoa powder
1 teaspoon vanilla or cinnamon for extra zing.
Whisk all ingredients on medium heat for 3-5 minutes. Once mixture is hot, set to low heat. Hot chocolate is tricky, be sure to set at a lower temperature and simmer, do not let boil. Serves four deliciously hot and creamy and sinful cups.
