Happy New Year! I discovered a great way to start the new year, one of my favorite holidays. It’s not about making unattainable goals and subsequently punishing yourself when you inevitably don’t reach those goals. I mean, I’d like to think of myself as the most beautiful woman in the world, but where does that get any of us?* Anyway…
It’s no good to impose stressful resolutions on ourselves, but rather let’s take another approach; changing our mindsets so that we can be our best selves, and then the goals that we want to achieve will inevitably fall into place. Right?

1. List Your Accomplishments-2014
Ran my first 1/2 marathon
Published a few pieces on this great site here, here and here too.
Learned to bake paleo
The Spoon and Apron made it into the press and twice!
2. List Your Projected Accomplishments- 2015
Run second 1/2 marathon
Learn to cook better
Publish a cookbook
3. Create a Mindset for Achieving What You Want & Document It.
For instance, a doubt-free mindset. Here’s an example of documentation, a little piece of art, something you can look at everyday that will inspire you to push forward, and it creates a mindset for what you want to acheive. What do you want to accomplish in 2015? Tell me your resolution mindset.

And now, for a new recipe, the first meal of 2015.
Crispy Kale & Sausage Skillet Omelette
Ingredients:
4 large eggs
1 cooked italian (or your choice) sausage link, diced. I like these.
1 cup finely chopped kale
Olive Oil to taste
Salt to taste
Method:
Heat skillet with 2 tablespoons of olive oil on medium heat for about one minute. Add kale and cook until edges are crispy, about five minutes. In a separate bowl, beat eggs together, add diced sausage. Poor egg and sausage mixture over kale and fold when omelette is cooked on top, about 3-5 minutes. Cook for another couple minutes and serve. Serves two. Mangia! Click for buttered coffee recipe.
