Paleo Chocolate Chip Cookies

I have a bunch of paleo chocolate chip cookie recipes scribbled in my little notebook, but this one turned out the best. I’ve been keeping this recipe for myself…but now, here it is. It tastes just as good as the one on the back of the Nestle bag…and even better because I use 64%-85% high quality dark chocolate. I brought these to a party and shared them at a food blogging workshop, and nobody knew they were paleo. Chocolate chip cookies are my favorite to make and to eat. But of course… everyone loves to eat chocolate chip cookies. I cringe at the thought of making them any other way than the traditional recipe with flour, sugar, butter and chips, until now. Make them for a super bowl snack. Make them for your guests and see if they can taste that they are paleo. Delicious and sweet.

Paleo Chocolate Chip Cookies


1/2 cup cashew butter- thoroughly mixed, should not be too oily

6 tablespoons salted butter browned or ghee/coconut oil melted

1/2 cup honey

1 egg

1/2 teaspoon salt

3/4 teaspoon baking soda

1/2 cup coconut flour- sifted

1/2 cup dark chocolate chips of your choice


Preheat oven to 350˚ and cover a cookie sheet with parchment paper. Brown some butter, six tablespoons to be exact. This cute site shows you how. Make sure all the ingredients are room temperature, for browned butter make sure it has cooled enough but is not solid. Mix honey, butter, cashew butter, and egg together. Make sure the butter is not hot enough to cook the egg, other wise you’ll end up with scrambled egg cookies. In a separate bowl, sift or whisk together the coconut flour, salt and baking soda. Coconut flour can get chunky. so just make sure there are no lumps. Now, stir in the wet ingredients with the dry ingredients. Make sure it’s all mixed thoroughly. Scoop onto baking sheet. For an added zing, sprinkle a scant amount of large crystal sea salt atop. Makes about 20 delicious cookies.
