Watermelon, Olive Oil and Summer

Because I write about food, I’ll sometimes receive free samples of food. Everything from  vegan cheese, honest burgers, to olive oil have graced my kitchen. I don’t mind so much, since I love trying out new foods and recipes. Recently I received a few bottles of Bertolli olive oil and while I’m not exclusive about any one brand, it was delightful to cut down on my grocery bill for a while. A bottle of olive oil doesn’t last long in my house and rapid consumption gets expensive! Note, I use it everyday, in pretty much everything I make. It only seemed natural to concoct a summer recipe involving some olive oil and a favorite summer fruit, watermelon. Next time I’ll try throwing one of these watermelons on the grill (got any good recipes?). Until then, here’s a minty, watermelon and olive oil salad.

Watermelon Mint and Lime Salad

1/4 watermelon, cut into squares

1 bunch watercress

1 sprig of fresh mint

1/2 cup feta cheese (optional)

Dressing

1/4 cup olive oil

1/4 cup balsamic vinegar

1 slice of fresh lime juice

2 tsp honey

It’s time to get fresh with the melon and mint. Easy, breezy, and watermelony.
